5 Days of Food Gifts – Simple Yet Unusual Cookies

Not sure what to get your extended family or friends for Christmas?  Are you wanting to keep it simple and would like to try your hand at homemade food gifts, but all you can think of is chocolate chip cookie mix in a jar?  Join me this week with 5 Days of Food Gifts and I will show you some simple recipes which include a few mixes as well.
Making food gifts has become such a popular and frugal idea, that even Walmart has many inexpensive Christmas containers for the ‘do-it-yourselfers’ crowd.  Look around your home and I am sure you will find something.  Even a pasta box turned inside out and wrapped with Christmas paper would make a nice container.
Let’s get started with a couple of unusual cookie recipes that are just right to put in a jar or practically any container.  They are small, festive and oh so yummy!

Cherry Cookies with Cardamon

Ingredients and instructions

10 oz jar maraschino cherries(drained and chopped)
2 1/3 cup plus 2 TBS flour(divided)
1 tsp baking powder
1 tsp cardamon
1/2 tsp baking soda
1/2 cup butter, softened
1 cup sugar
3 oz cream cheese, softened
1 egg
2 TBS milk
1 tsp almond extract
powdered sugar for garnish

Combine cherries in a small bowl and 2 TBS of flour, mix and set aside.  Combine the remaining flour, baking powder, cardamon and baking soda.  In a separate bowl, cream butter, sugar and cream cheese until fluffy.  Add egg, milk and almond extract and beat until combined.  Gradually add flour mixture to butter mixture, beating until combined, then fold in cherry mixture.  Chill for one hour, then shape into small one inch balls, place on ungreased cookie sheet.

 Bake at 350 degrees for 14 minutes.  Cool on wire rack and garnish with powdered sugar.

Lime Nugget Cookies

Ingredients and instructions

3/4 cup butter, softened
1 cup powdered sugar(divided)
4 TBS lime juice
1 TBS vanilla extract
1 3/4 cup plus 2 TBS flour
2 TBS cornstarch
1/2 tsp salt

In a large bowl, combine the butter and 1/2 cup powdered sugar and beat until fluffy.  Add lime juice and vanilla, beat again.  In another bowl, combine the flour, cornstarch and salt.  Add the flour mixture to the butter mixture and mix until combined.  Shape into a 2 inch wide log and chill for 1 hour.  Cut into 1/8 inch slices, place on an ungreased baking sheet and bake at 350 degrees for 12-14 minutes or until golden brown.  Remove to wire racks and cool slightly.  Place remaining powder in a plastic bag, add cookies and gently toss to coat.  Cool before putting them in your container.
