This might sound like a no brainer to some, but to be quite honest, it took me awhile to figure out how to fry the perfect pancake. It seemed that they would be too thick, too big, too burnt or I would flip them too early or too late. I make them from scratch, so I couldn’t seem to find the right recipe either.
I was surprised to find out that I wasn’t the only one to have trouble frying pancakes. I was also surprised that many buy the pancake mix or Bisquick. A part of being more self sustainable is learning to do these little things from scratch. Yes, learning how to fry a pancake from your own made from scratch mix is one small step towards self sufficiency!
So, here is my favorite, simple pancake recipe and simple instructions. No more Bisquick or boxed pancake mix!
Stir the dry ingredients together. In a separate bowl, stir the eggs, milk and oil. Add this to the flour mixture and stir until just blended. Yes, it will be slightly lumpy.
Now, I put a tablespoon of butter on my griddle and move it around to cover the whole surface while it is heating up to medium high heat. Then, I put a large spoonful or small serving spoon of the pancake mix on the griddle.
Within a minute or two, take them off the griddle and add another tablespoon of butter with each batch. I added chocolate chips to the batch below.
Simple, yes! Time consuming, a little, but well worth it!
