How to Make Dandelion and Violet Lemonade

With our sandy soil, we never really had any dandelions, until this year.  We’ve always had some violets, but this year it seems we have had an abundance of them.  I thought about making violet jelly, and maybe I will, but I decided to try utilizing both the dandelions and violets.
The end result was quite refreshing!  I have to admit though, I could’ve just left the flowers in the jar forever because they looked so pretty!
We all know now that dandelions are not a weed to be destroyed.  I remember as a child having fried dandelions that my mom made.  They were pretty good and I never quite understood why anyone would want to kill a pretty yellow flower that they could even eat.
The Benefits of Dandelion and Violets

Dandelion contributes to bone health as they are high in calcium.  They are also high in vitamin C and Luteolin which protects the bones from age related damage.  It also helps the liver in many ways by stimulation and regulates the proper flow of bile.

Dandelion is also good for diabetics in that it helps stimulate the production of insulin from the pancreas which in turn lowers blood sugar levels.

Dandelion is highly diurectic in nature which helps in keeping the kidneys and bladder clean and free of toxic substances.

Other benefits include helping clear up acne, weight loss, improving urinary and gall bladder disorders and much more.

Violets have beta-carotene and absorbic acid.  They are known to relieve coughs, reduce inflammation and decrease blood pressure along with many other benefits.

Dandelion and Violet Lemonade

What you will need:

Dandelions and violets to fill about half of a half gallon mason jar
3 lemons

Gather the dandelions and violets.  Rinse them off and put them in a half gallon mason jar.  Cut the lemons and squeeze the juice in the jar, then put the lemon peels in the jar too.  Fill the jar with water and screw on a lid.

Set the jar in the sun for a day or two.  Strain the flowers with cheesecloth or whatever you have on hand.  This will make about 1 1/2 quarts of lemonade.

Put ice in a cup, pour lemonade and add honey or stevia to taste.  Sit outside in the shade and enjoy sipping this healthy drink!
