When my daughter and I first took a bite of these little gems, we were expecting to get an overpowering taste of coffee. Instead, our eyes lit up at the same time as the blend of chocolate, coffee and caramel was absolutely divine! This would be great for the coffee lover. I’m sure we all know just a few!
2 cups expresso beans, slightly crushed
1 cup butter
1 1/2 cups packed brown sugar
2 cups semisweet chocolate chips
Put the coffee beans at the bottom of a 13×9 inch ungreased pan. Spread evenly and set aside. In a medium saucepan, bring butter and brown sugar to a boil, continue to boil over medium/low heat for exactly 7 minutes, stirring constantly. Remove from heat and pour over coffee beans. Spread carefully. Add the chocolate chips evenly on top and cover the pan for a couple of minutes. Then, spread the melted chocolate chips evenly. Chill for 1-3 hours, then break up into pieces.
